I’ve been on a spinach kick for the past few months. I’ve come to find it’s so easy to add this power-house veggie to practically any meal. Spinach is loaded with nutrients including iron, vit. K, vit. A, folate, magnesium, vit. C, vit. B2, calcium, potassium and lots more. I buy fresh, organic baby spinach and clean the amount I’ll need for each meal.
