Simple Gluten-free Apple Crisp!

I get a great newsletter from Kripalu. They usually have some great vegetarian recipes on their newsletter. On one of them they had a recipe for an apple crisp – yum – I love any kind of crisp recipe!
So since I eat gluten-free, I changed a couple ingredients and wallah, a delicious gluten-free dessert! How do I know? Well, I already made it about 6 times in the last 6 weeks with different fruit combos. Check the recipe out below:
Topping:
- 1 cup gluten-free oats
- 1/3 cup ground flax seed
- 1/3 cup gluten-free baking flour
- pinch salt
- 1/2 tablespoon cinnamon
- 1/2 cup maple syrup
- 1/2 cup Earth Balance
Bottom
- 3 apples, cored and cut in large dice
- 1/4 cup apple cider
- 2 tablespoons gluten-free baking flour
- 1 teaspoon cinnamon
Combine all topping ingredients and set aside.
Core and cut apples, and toss with cinnamon and gluten-free flour. Pour cider into pan, then lay down apples. Spread topping on apples. Cover and bake at 350 degrees for 30 minutes or until apples reach desired softness. Remove cover and bake for another 10 minutes to crisp.
I like it warm with vanilla ice cream or soy ice cream. You can also vary the fruit or add things. I’ve made it also with apples and pears and with apples and blueberries. Both were really good and I also add some pecan pieces to the topping mixture which makes it really yummy!

Sure Donna Maria. A gluten-free diet means, in my case, a healthier body – literally! As you may know, I was diagnosed with Grave’s Disease, which is an auto-immune dis-ease (gives you hyperthyroid symptoms-your body thinks your thyroid is an invader so it attacks it), back in 2003. I did a ton of research and decided to treat it naturally – not what my doctor ordered, but he was very understanding and supported me in whatever I decided to do.
I was thinking about eating gluten free because I read that gluten may have a role in facilitating some auto-immune diseases. I had a client at the time who was just diagnosed with Celiac disease which means she cannot eaten gluten at all. One day she came in and told me she was reading about how gluten plays a role in auto-immune diseases, particularly ones dealing with the thyroid, particularly Grave’s Disease. So I decided then and there to try it.
So in March 2007 I started eating gluten free. By September 2007, my thyroid numbers were normal – first time in 4 years so that was proof enough for me. I continued eating that way and my thyroid numbers have been normal ever since. So basically, I have been in remission from Grave’s since I started eating gluten free.
I don’t believe I’m Celiac because I do cheat here and there with no problems – something that people with Celiac cannot do. But I feel I definitely have an intolerance to wheat and gluten. I actually think more people have this intolerance who are not even aware of it.
