A Simple Vegetarian Mexican Meal

I love Mexican inspired dishes! I created a quick, simple dish that is delicious! It’s also gluten free and a great alternative when you feel like having a non-meat meal. I put in as much of each ingredient that I feel like eating at that time – no set measurements. So have fun with it.

~ EAT your dish mindfully by taking the time to savor every bite by eating slowly, being grateful for being able to prepare and eat such nurturing food.
Here it is. Enjoy!
In a bowl combine:
- brown rice
- 1 or 1/2 avocado cut up
- grape tomatoes cut up
- chopped cilantro
- black beans
- salsa
Mix it up and mindfully enjoy!
